You’ll need (makes 20)
180g butter at room temperature
200g caster sugar
1 egg at room temperature
a few drops of vanilla extract
400g all-purpose flour
a pinch of salt
In a large bowl, mix butter and sugar until fluffy. Whisk in egg and vanilla extract.
Add flour & salt and mix until you have a smooth cookie dough.
Shape dough into a rectangular form, wrap in plastic foil and chill 40 minutes.
Preheat the oven to 180°C and cover 2 baking sheets with parchment paper.
Dust your working surface with a little flour and roll out the dough to a few millimeters thickness. Cut out shapes of the dough and arrange on the baking sheet.
Bake the cookies for 12 minutes, or until golden brown. Carefully transfer them to a wire rack and let them cool down completely.
